Method
Step 1: Prepare the Meat Mixture
- Heat the vegetable oil in a skillet over medium heat. Add the onions and sauté until they become translucent, about 4-5 minutes. Next, toss in the carrots and celery. Cook for another 5 minutes, stirring occasionally.
Step 2: Add the Ground Meat
- Now it's time to add the ground lamb. Like an old friend, let it brown evenly. Use a spatula to break it up as it cooks. This process usually takes around 7-10 minutes. Once it's all browned, add the tomato paste and Worcestershire sauce. Mix well.
Step 3: Pour in the Broth
- Pour in your choice of broth, stirring in the fresh herbs. Let it simmer for 10-15 minutes until thickened. The smell should be heavenly by now.
Step 4: Make the Mashed Potatoes
- While the filling simmers, let's tackle the potatoes. Boil them in salted water for about 15 minutes or until tender. Drain and return them to the pot. Add the butter, milk, garlic powder, and season to taste. Mash to your desired consistency.
Step 5: Assemble the Pie
- In an air fryer-safe dish, add the meat filling first. Then, dollop the mashed potatoes on top. Spread them out so they cover the filling completely.
Step 6: Air Fry to Perfection
- Set your air fryer to 180°C (350°F). Place the dish in the air fryer and cook for about 15-20 minutes. You’ll know it’s ready when the top is golden and crispy.
Notes
- Ingredient Swaps: For a healthier twist, try using lean ground turkey instead of lamb.
- Herb Variations: Feel free to experiment with herbs. Thyme and oregano pair well too.
- Storage: If you have leftovers, store them in an airtight container in the fridge for up to three days.
- Reheating: You can reheat in the air fryer for a few minutes to regain that crispy top!
- Serving Size: This recipe serves four, but you can easily double it for a larger crowd.
