Step 2: Cook the Meat Filling

Toss in the diced carrots and cook them for 3 to 4 minutes more. Season with salt and pepper. Next, stir in the flour and cook for 1 minute. This helps thicken your filling. Add the tomato paste, chicken broth, and Worcestershire sauce. Stir to combine and let it simmer for about 5 minutes.
Step 3: Add the Meat and Herbs
- Now, it’s time for the star of the show — the ground lamb. You can also use beef if you prefer. Crumble it into the skillet and cook until browned. This usually takes 7 to 10 minutes. Once browned, mix in the rosemary, thyme, corn, and peas. Remove from heat.
Step 4: Assemble the Dish
- Preheat your oven to 400°F (200°C). Grab a baking dish and pour the meat filling into the bottom. Top it generously with the creamy mashed potatoes, spreading them evenly. For an extra touch, create some swirls with a fork to make it pretty.
Step 5: Bake
- Place your assembled Shepherd's Pie in the preheated oven and bake for about 25-30 minutes or until the top is golden brown and the filling is bubbly.
