Ingredients
  

  • 7 medium white potatoes, peeled and diced
  • 2 lbs lean ground beef
  • 1 medium golden onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly cracked black pepper, to taste
  • 2 cans sweet whole kernel corn, drained 14 ¾ ounces each
  • 16 ounces petite frozen green peas
  • 1/2 cup Bisquick original baking mix
  • 1 cup whole milk
  • 2 large eggs
  • 1 cup sharp cheddar cheese, shredded

Method
 

Step 1: Prepare the Potatoes
  1. Start by boiling the peeled and diced potatoes in salted water. This will take about 15-20 minutes until they're tender. Drain and mash them with a bit of salt and pepper added to taste. Set aside.
Step 2: Cook the Beef and Vegetables
  1. In a large skillet, sauté the chopped onion over medium heat until soft. Add the lean ground beef to the skillet. Season it with garlic powder, smoked paprika, and salt and pepper. Cook until the beef is browned, breaking it apart as it cooks.
Step 3: Add the Corn and Peas
  1. Once the beef is cooked through, stir in the drained corn and frozen peas. Allow this mixture to heat for a few minutes. Stir consistently so everything melds together.
Step 4: Make the Bisquick Topping
  1. In a mixing bowl, combine the Bisquick mix, whole milk, and eggs. Stir in half of the shredded cheese for additional flavor.
Step 5: Assemble the Dish
  1. In a baking dish, spread the beef and vegetable mixture evenly. Top it with your mashed potatoes, smoothing them so they cover the filling. Pour the Bisquick batter over the potatoes, then sprinkle the remaining cheese on top.
