Mashed Potato Layer
4 lb / 2kg White Potatoes, peeled & cut into 1" cubes
1/2 cup / 125ml Heavy Cream
3-4generoustbsp Butter
1/4-1/2 tsp Ground Nutmeg
1/2 cup / 40g Freshly grated Parmesan Cheese
Salt & Black Pepper, to taste
Instructions
Step 1: Prep the Ingredients
Start by chopping the vegetables. You’ll want your carrots, celery, onion, and garlic finely chopped. This only takes a few minutes but ensures the filling cooks evenly.
Step 2: Brown the Lamb
Heat a splash of olive oil in a large skillet over medium heat. Once hot, add your minced lamb. Cook it for about 5-7 minutes or until it's browned throughout. Make sure to break up large chunks with a spatula. You’re looking for a nice sear here, as that caramelization adds lots of flavor.
Step 3: Add the Veggies
Toss in your chopped vegetables and minced garlic to the pan. Sauté together for about 3 to 4 minutes until they start to soften. You can enjoy the smell — it’s incredible!
Step 4: Stir in the Flavor Enhancers
Once everything is combined, it’s time to introduce the Worcestershire sauce, gravy granules, tomato puree, and red wine. Stir it all together.Allow the mixture to simmer gently for around 10 minutes. That’s also when you should throw in the bay leaves, crushed rosemary, dried thyme, and season with salt and black pepper. Let those flavors intertwine!
Step 5: Add the Broth
Pour the beef broth in, then let it cook on medium heat for 15 minutes. You want the mix to thicken slightly, creating that lovely gravy texture.
Step 6: Prepare the Mashed Potatoes
In a separate pot, boil water and add your cubed potatoes. Cook until fork-tender, about 15-20 minutes. Drain the water, then return the potatoes to the pot. Now add butter, heavy cream (or milk), and ground nutmeg.Mash these together until creamy. Incorporate salt, black pepper, and grated Parmesan. The smell will tempt you.
Step 7: Assemble the Dish
Now, it’s time to layer everything! In a pre-greased baking dish, pour the lamb mixture. Spread it out evenly, then add that wonderful mashed potato layer on top. Use a fork to create peaks; these will crisp up nicely while baking.
Step 8: Bake to Perfection
Preheat your oven to 400°F (200°C). Slide your Shepherd’s Pie into the oven and let it bake for about 30-35 minutes, until the top is a golden brown.You’ll want to keep an eye on it. There’s a fine line between perfectly cooked and overdone!
Notes
Use Leftover Lamb. If you have leftover lamb roast, chop it up and use that instead. It saves time!
