Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts or thighs, diced into bite-sized pieces
  • 6 cloves of garlic, finely minced
  • 2 shallots, finely chopped
  • 1 tablespoon smoked paprika
  • 1 tablespoon freshly chopped oregano
  • Pinch of chili flakes, Kosher salt, and cracked black pepper
  • 1/3 cup full-fat plain Greek yogurt
  • 1/4 cup extra virgin olive oil
  • 2 Persian cucumbers, diced
  • 1 ripe avocado, cubed
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh dill
  • 6 ounces crumbled feta cheese
  • 1-2 cups homemade Tzatziki sauce
  • Lettuce, peperoncini, red onion slices, cherry tomatoes, and warm pitas for serving
Ginger Tahini Sauce
  • 1 tablespoon toasted sesame oil
  • 1/2 cup creamy tahini
  • 2 teaspoons freshly grated ginger
  • 1 garlic clove, finely grated
  • 2 teaspoons tamari
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons raw honey

Method

Step 1: Marinate the Chicken
  1. Start by placing the diced chicken in a large bowl. Add the minced garlic, chopped shallots, smoked paprika, oregano, chili flakes, salt, and pepper.
Toss everything together until the chicken is well coated. Cover the bowl and let it marinate for at least 30 minutes in the fridge. This helps the flavors meld beautifully.
Step 2: Prepare the Tzatziki Sauce
  1. While the chicken is marinating, let’s get the tzatziki sauce ready. In a separate bowl, combine the Greek yogurt, diced cucumbers, lemon juice, and dill. Mix well. Season with salt to taste. Let it sit in the fridge to chill and allow the flavors to develop further.
Step 3: Cook the Chicken
  1. Heat a tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the marinated chicken. Cook until the chicken is golden brown and cooked through, about 7-10 minutes. Stir occasionally to ensure even cooking.
Step 4: Assemble the Bowls
  1. Take your base—whether it’s lettuce, rice, or quinoa—and place it in a bowl. Top with the cooked chicken, then drizzle generously with tzatziki.
Add avocado, diced cucumbers, cherry tomatoes, and any other toppings you fancy. Sprinkle some crumbled feta cheese on top for that extra burst of flavor.
Step 5: Serve and Enjoy!
  1. Serve the bowls immediately with warm pita bread on the side. Each bite should be a delightful combination of flavors. You’ll soon find it’s hard to stop at just one bowl.

Notes

  • Marinate Longer for More Flavor: If you have the time, marinate the chicken for a few hours or even overnight. It makes a difference.
  • Use Fresh Ingredients: Fresh herbs and vegetables enhance the flavor significantly. Seek out the freshest produce available.
  • Adjust the Spices: If you enjoy heat, add more chili flakes or some diced jalapeños to the chicken mix.
  • Experiment with Bases: Don’t hesitate to try different bases, like couscous or even a grain-free option like riced cauliflower.
  • Make Ahead: You can prepare the tzatziki and marinated chicken a day prior, which saves time on busy days.
