Ingredients

  • 2 pounds thinly sliced sirloin or skirt steak
  • 8 ounces sliced button mushrooms
  • 2 poblano chilies or green bell peppers, sliced
  • 1–2 sweet onion slices, thinly cut
  • 2 tablespoons unsalted butter
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 2 teaspoons packed brown sugar
  • 1 tablespoon low-sodium soy sauce
  • 2 1/2 to 3 cups beef stock
  • salt and freshly ground black pepper
  • 1/3 cup chopped fresh cilantro or flat-leaf parsley
  • 1 teaspoon smoked paprika
  • 1 tablespoon balsamic vinegar
  • 6 slices provolone cheese
  • 4 to 6 hoagie-style sandwich rolls
  • Chipotle or regular mayonnaise

Method

Step 1: Prepare Your Vegetables
  1. Start by slicing the sweet onions, poblano chilies (or green bell peppers), and mushrooms. Having everything prepped ahead makes the assembly more seamless.
Step 2: Brown the Meat
  1. Although optional, browning the meat enhances the flavor. In a pan, heat 2 tablespoons of unsalted butter over medium heat. Add the sliced sirloin and cook until browned. This step infuses the beef with a deeper flavor.
Step 3: Assemble in the Crockpot
  1. Place the browned beef in your crockpot. Add the sautéed vegetables, garlic powder, Worcestershire sauce, soy sauce, brown sugar, and smoked paprika. Pour in the beef stock, then add salt and black pepper to taste. Give it a gentle stir.
Step 4: Let It Cook
  1. Cover the crockpot and set it to low for 6-8 hours or on high for 3-4 hours. This slow cooking allows all the flavors to meld beautifully.
Step 5: Final Touches
  1. Once the cooking time is up, check the beef for tenderness. If it’s fork-tender, you’re ready to proceed. Stir in balsamic vinegar and fresh herbs before serving.
Step 6: Assemble the Sandwiches
  1. When you’re ready to serve, slice the hoagie rolls. Spoon the beef mixture onto the rolls and top with provolone cheese.
If you prefer, pop them under the broiler for a minute to melt the cheese to a gooey perfection.

Notes

  • Use Frozen Meat: If you have frozen beef, you can still use it. Just add an additional hour to cooking time if cooking on low.
  • Avoid Overcrowding: If your crockpot is too full, the meat might not cook evenly. Cook in batches if necessary.
  • Choose Your Cheese Wisely: While provolone is traditional, feel free to experiment with Cheddar or even a cheese blend to suit your palate.
  • Adjust Seasoning: Taste the mixture before serving, adjusting seasoning as needed. Everyone's palate is different!
  • Basil or Oregano: Fresh herbs can elevate the freshness. Consider adding a bit just before serving.
