  • 6 garlic cloves, thinly sliced or smashed
  • 1/2 pound ground turkey or pork
  • 8 ounces Chinese-style wheat noodles or rice vermicelli
  • 1/2 cup reduced-sodium soy sauce
  • 2 cups fresh baby spinach, coarsely chopped
  • 2 1/2 cups low-sodium chicken stock
  • 4 green onions, sliced
  • 2 cups assorted mushrooms, diced
  • 1 medium shallot, finely chopped
  • 1-2 tablespoons crushed chili flakes
  • 2 tablespoons seasoned rice vinegar
  • 3 tablespoons smooth peanut butter or tahini
  • 1/4 cup sweet hoisin sauce
  • 1 tablespoon maple syrup
  • 1/3 cup + 2 tablespoons toasted sesame oil

Method
 

Step 1: Prepare the Noodles
