Ingredients

  • 12 ounces bittersweet or semi-sweet chocolate, roughly chopped: I often find that the balance between bittersweet and sweet chocolate keeps the flavors in perfect harmony.
  • 2 large ripe bananas, cut into 1-inch slices: Remember, the riper the banana, the sweeter the bites. They bring their own natural sugar which beautifully complements the chocolate.
  • 1 tablespoon coconut oil: Adding coconut oil creates a smoother chocolate coating and gives a subtle coconut flavor, which is divine.
  • Pinch of flaky sea salt: This ingredient is a game changer! It balances out the sweetness and enhances the overall flavor profile.
  • Assorted toppings: Think outside the box! You can use almond butter for a nutty finish, crushed pretzels for crunch, honey for extra sweetness, or even dark chocolate chips for a double chocolate experience.
  • 1/4 teaspoon ground cinnamon: This adds a warm touch and complements the bananas perfectly.
  • 1 teaspoon finely chopped toasted nuts optional

Method

Step 1: Prepare the Bananas
  1. First things first, let's get those bananas ready. Peel two large ripe bananas and slice them into 1-inch thick rounds. Make sure they are thick enough to hold their shape but not too thick that they are hard to bite into. Lay them out on a baking sheet lined with parchment paper. I find that this method prevents them from sticking together.
Step 2: Melt the Chocolate
  1. Next, grab your bittersweet or semi-sweet chocolate. Place it in a microwave-safe bowl with the tablespoon of coconut oil. Microwave the mixture in 30-second intervals, stirring in between. It usually takes about a minute to a minute and a half to fully melt the chocolate. The coconut oil helps make your chocolate coating nice and smooth.
Step 3: Dip the Bananas
  1. Now, here comes the fun part! Once the chocolate is melted, dip each banana slice into the chocolate until fully coated. Let the excess chocolate drip off for a moment. Placing the coated bananas back on the parchment-lined baking sheet is the next step.
Step 4: Add Toppings
  1. While the chocolate is still warm, sprinkle your desired toppings on top. Whether you opt for crushed pretzels, a drizzle of honey, or a dusting of cinnamon, go wild here! Each bite will turn into an unexpected treat, and every bite will be a new adventure.
Step 5: Freezing
  1. Now, it’s time to let them freeze. Place the baking sheet in the freezer and allow the banana bites to freeze for about 1-2 hours or until completely solid. Once that’s done, you can either enjoy them right away or transfer them to an airtight container for longer storage. I recommend layering them with parchment paper to prevent sticking.

Notes

  • Chocolate
Choosing the right chocolate makes a world of difference. I prefer bittersweet chocolate because it strikes a perfect balance between sweet and rich. If you’re feeling adventurous, try adding a splash of vanilla extract to the melted chocolate for an extra flavor boost!
  • Bananas
Ripe bananas are key to this recipe. When they are too green, they lack the sweetness and creaminess we desire. If the bananas are too ripe, they may turn mushy when frozen, which definitely isn’t what we want.
  • Coconut Oil
Coconut oil not only makes your chocolate coating smoother, but it also lends a hint of tropical flavor. Just ensure it is in liquid form when adding it to the chocolate.
