Ingredients

  • 2 1/2 lbs potatoes, peeled and cubed a mix of russet and yellow potatoes is preferred
  • 1/2 cup whole milk
  • 1/2 cup 18% cream
  • 2 tablespoons salted butter
  • 1 teaspoon ground nutmeg
  • 1 lb frozen green beans, thawed and cut into 1-inch pieces
  • 1 teaspoon extra virgin olive oil
  • 1 small white onion, diced
  • 1 clove garlic, minced
  • 2 large carrots, chopped
  • 1 bay leaf
  • 2 lbs lean ground beef
  • 2 1/2 tablespoons all-purpose flour
  • 1 can tomato paste
  • 4 tablespoons hot water
  • 1 1/2 teaspoons Worcestershire sauce
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped
  • Sea salt for seasoning
  • 1 teaspoon Dijon mustard optional, for a tangy boost
  • 1/4 teaspoon smoked paprika optional, for a subtle smoky flavor
  • Vegetable oil spray

Method

Step 1: Boil the Potatoes
  1. Start by peeling and cubing your potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook until you can easily poke a fork through them, which usually takes about 15-20 minutes.
Step 2: Prepare the Creamy Topping
  1. Once the potatoes are tender, drain them. Add in the whole milk, cream, butter, and ground nutmeg. Mash until creamy and smooth. The nutmeg adds a warmth that’s simply moving.
Step 3: Sauté the Veggies
  1. In a large skillet, heat the olive oil over medium heat. Toss in the diced onion, minced garlic, and chopped carrots. Sauté until the vegetables soften, about 5-7 minutes.
Step 4: Cook the Beef
  1. Add the ground beef to the skillet. Break it up with a spatula as it cooks, allowing it to brown evenly. This step should take about 8-10 minutes. The aroma should fill your kitchen.
Step 5: Create the Flavorful Gravy
  1. Once the beef is brown, mix in the flour and stir for about a minute. Add the tomato paste, hot water, Worcestershire sauce, black pepper, and bay leaf. Stir to combine and simmer for another 10 minutes. This is where you can decide if you want that optional Dijon mustard or smoked paprika for an added punch!
Step 6: Assemble the Pie
  1. Preheat your oven to 400°F (200°C). In a baking dish, layer the beef and vegetable mixture, ensuring it’s even. Next, top it off with your creamy mashed potatoes. Spread it out gently to create a smooth surface.
Step 7: Bake
  1. Pop your dish in the oven for about 25-30 minutes. You want the top to be golden and slightly crispy. Keep an eye on it; the smell will be irresistible!

Notes

  • Texture Matters: Make sure to mash potatoes until extra creamy without lumps for the best topping.
  • Season Well: Don’t skimp on the salt and pepper; they boost the flavors tremendously.
  • Time-Saving Tip: Prepare the beef and vegetable mixture a day ahead and store it in the fridge. You can quickly bake it the next day.
  • Fresh Herbs: Use fresh parsley instead of dried for a burst of flavor.
  • Let it Cool: Allow Shepherd's Pie to rest for 5 minutes after baking. This makes it easier to serve.
