There are few things more comforting than a hearty shepherd's pie. As I rummaged through my recipe collection, I stumbled upon one that embodies both nostalgia and culinary delight: Keith Richards' shepherd's pie.

Ingredients
  

  • 2 lbs of ground beef
  • 2 large onions, finely diced
  • 2 large carrots, shredded
  • 1 tablespoon of unsalted butter
  • 3 lbs of potatoes, peeled and cut into cubes
  • 1 tablespoon of cornstarch or cornflour
  • 2 cans of rich beef broth 12 ounce
  • Freshly ground salt and black pepper, to taste
  • 1 teaspoon of smoked paprika
  • 1 tablespoon of Worcestershire sauce

Method
 

Step 1: Prepare the Vegetables
  1. Start by sautéing the onions and carrots in a large skillet. I typically heat the butter over medium heat until it’s melted and bubbly. 
    Add the onions first. After about five minutes, toss in the shredded carrots. Sauté for another five minutes until they’re soft and fragrant. You want that lovely golden-brown caramelization to shine.
Step 2: Cook the Ground Beef
  1. Next, crank up the heat a notch! Now it’s time to add the ground beef. Break it apart with your wooden spoon. 
    Enjoy the sizzle as the beef starts to brown. This part takes about 10 minutes. Drain any excess fat. Season generously with salt, pepper, smoked paprika, and Worcestershire sauce.
Step 3: Add the Broth
  1. Once the ground beef is nicely browned, stir in the beef broth and cornstarch. This mixture will provide the filling with that satisfying sauce while ensuring everything is juicy. Let it simmer for about 15 minutes. 
    You’ll notice the broth getting thicker and all the flavors coming together. Trust the process; your kitchen will smell downright inviting!
Step 4: Prepare the Mashed Potatoes
  1. While that’s happening, let’s tackle the potatoes. Boil them in a large pot until tender; this usually takes about 15-20 minutes. 
    Once cooked, drain them and return to the pot. Add salt, pepper, and a splash of butter. Mash until smooth. You want them creamy, not gluey.
Step 5: Layer in a Baking Dish
  1. Now, it’s time for the grand assembly. Preheat your oven to 400°F (200°C). In a baking dish, spoon the beef and veggie filling. 
    Spread that creamy mashed potato on top, making sure to create little mounds for texture. You can use a fork to create swirls; it makes for a prettier presentation.
Step 6: Bake to Perfection
  1. Slide the dish into the oven. Bake for about 25-30 minutes until the top is golden brown and slightly crispy. Keep an eye on it. When you see the edges bubbling, you know you’re in for a treat!
