Ingredients

  • 1 packet taco seasoning blend
  • 1 1/2 pounds lean ground beef
  • 1 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • 1 medium onion, finely diced
  • 1 can diced tomatoes with their juices
  • 3/4 cup hot water
  • Garlic powder, to taste
  • Salt and freshly ground black pepper, to taste
  • 1 can whole kernel corn, drained 15 oz
  • 1 box corn muffin mix
  • 1 cup shredded sharp Cheddar cheese optional
  • 1 can sliced black olives, drained (optional) 6 oz

Method

Step 1: Prepare the Meat Filling
    • Add the diced onion and sauté for about 5 minutes, until it becomes translucent.
    • Introduce the ground beef to the skillet and cook until browned and no longer pink, breaking it up with a spatula.
    • Drain any excess fat if necessary.
Step 2: Season the Meat
    • Sprinkle the taco seasoning blend, smoked paprika, and chili powder over the meat mixture.
    • Pour in the diced tomatoes with their juices and the hot water.
    • Stir well, bringing the mixture to a simmer. Cook for about 10 minutes to allow the flavors to meld.
    • Taste and adjust seasoning with garlic powder, salt, and pepper as desired.
Step 3: Prepare the Corn Topping
    • In a separate bowl, combine the corn muffin mix according to package instructions.
    • Fold in the drained corn for an added sweet crunch.
Step 4: Assemble the Pie
    • Preheat your oven to 400°F (200°C).
    • Spread the meat mixture evenly in the bottom of a greased baking dish.
    • Pour the corn muffin batter over the meat, ensuring it covers the entire surface.
    • Optional: Sprinkle shredded Cheddar cheese and black olives on top for extra flavor.
Step 5: Bake
    • Place the assembled dish in the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
Step 6: Serve
    • Let it cool for a few minutes. Slice and serve hot. Enjoy the hearty goodness!

Notes

  • Don’t Rush: Allow the beef to brown properly; this develops flavor.
  • Taste as You Go: It's your meal! Adjust spices to fit your personal preference.
  • Make It Ahead: This dish can be assembled and refrigerated. Bake it when ready to serve.
  • Gluten-Free Option: Use gluten-free corn muffin mix for a celiac-friendly dish.
  • Add Veggies: Feel free to include chopped bell peppers or zucchini into the meat mix for more nutrition.
