  • 1 cup plain all-purpose flour
  • 3/4 cup finely ground pistachio nuts
  • 3/4 cup white granulated sugar
  • 1/4 cup unsalted butter, softened to room temperature
  • 1 1/2 teaspoons baking powder

  • 2 Tablespoons neutral vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 whole egg plus 1 egg white
  • 6 Tablespoons sour cream or thick Greek yogurt
  • 6 Tablespoons whole milk
  • 1/4 teaspoon almond essence
  • 1 teaspoon finely grated lemon zest
  • 1/4 teaspoon ground cardamom
For the Cream Cheese Frosting
  • 6 ounces cream cheese, softened
  • 3/4 cup unsalted butter, softened
  • 4 cups sifted powdered sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons clear honey
  • 1/2 teaspoon fine salt

Method
 

Step 1: Prepare Your Ingredients
  1. Before you start baking, make sure everything is measured and ready to go. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
Step 2: Mix the Dry Ingredients
  1. In a medium bowl, combine the all-purpose flour, finely ground pistachio nuts, baking powder, baking soda, and salt. Whisk these ingredients together until well incorporated.
Step 3: Cream the Butter and Sugar
  1. In a large mixing bowl, cream together the softened butter and granulated sugar. You want this to be light and fluffy. This step is crucial for a light cake texture, so don’t rush through it!
Step 4: Add the Eggs and Oil
  1. Add the whole egg, egg white, and vegetable oil to your butter-sugar mixture. Mix on medium speed until everything is smooth and well blended, then add the vanilla and almond essence.

Step 10: Assemble Your Cake
  1. Once the cakes are completely cool, take one layer and place it on a serving plate. Spread a generous layer of frosting on top before placing the second layer atop it. Finish by generously frosting the top and sides of the cake. For a decorative touch, you can sprinkle some finely ground pistachio nuts on the top.
