Ingredients
  

Potato Topping:
  • 2 lbs 2 Yukon Gold or russet potatoes, peeled and diced into 1” chunks
  • 1/2 tsp fine Himalayan pink salt
  • 3/4 cup warm heavy cream
  • 1/4 cup grated Pecorino Romano cheese
  • 1 large egg, lightly whisked
  • 1/4 tsp garlic powder for extra flavor
  • 2 Tbsp unsalted butter, melted for brushing
  • 1 Tbsp fresh dill or chives, finely chopped, for garnish
Pie Filling:
  • 1 lb 1 ground beef, ground lamb, or a 50/50 mix
  • 1 Tbsp avocado oil or olive oil
  • 1 medium sweet onion, finely diced 1 cup
  • 2 garlic cloves, finely minced
  • 1 1/4 tsp kosher salt, adjusted to taste
  • 1/2 tsp freshly cracked black pepper
  • 2 Tbsp all-purpose flour or cornstarch
  • 1/2 cup dry red wine e.g., Malbec or Merlot
  • 1 cup beef or bone broth
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp sun-dried tomato paste
  • 1 1/2 cups frozen peas, carrots, and corn mix
  • 1/2 tsp smoked paprika

Method
 

Step 1: Prepare the Potatoes
  1. Start by peeling and chopping the potatoes. Place them in a pot filled with cold water. Add a pinch of salt and bring the water to a boil. Cook the potatoes until fork-tender, about 15-20 minutes.
    Once cooked, drain the potatoes and return them to the pot. Mash them with a hand masher or fork. Pour in the warm heavy cream, add the grated cheese, and mix in the egg and garlic powder. Mash until the potatoes are creamy and smooth. Set aside.
Step 2: Cook the Filling
  1. In a large skillet, heat the avocado oil over medium heat. Add the diced onion and cook until it turns translucent, about 5 minutes. Then, add minced garlic, cooking for an additional minute.
    Next, add the ground meat (beef, lamb, or both) to the skillet. Brown the meat, stirring often. Once cooked, drain excess fat if necessary. Season the meat with salt and cracked black pepper.
Step 3: Build a Rich Gravy
  1. Sprinkle the flour over the meat, stirring to combine. Pour in the red wine and scrape any brown bits off the bottom of the skillet, incorporating them into the filling. This step is crucial for flavor!
    Add the beef broth, Worcestershire sauce, and sun-dried tomato paste. Bring to a simmer, allowing the mixture to thicken. After a few minutes, fold in the frozen peas, carrots, and corn.
Step 4: Assemble the Pie
  1. Preheat your oven to 400°F (200°C). In a greased baking dish, spread the meat filling evenly. Then, top it with the creamy mashed potatoes. Smooth the potatoes over the top, making peaks for added texture.
    Brush melted butter over the potato topping for extra flavor and a beautiful golden crust.
Step 5: Bake
  1. Place the assembled pie into your preheated oven. Bake for about 30 minutes, or until the top is golden brown. If you like, you can broil it for a few minutes at the end for extra crispiness.
