  • 1 pound ground lamb
  • 2 teaspoons salt mixed with black pepper and divided into two equal 1-teaspoon portions
  • 2 teaspoons ground black pepper mixed with salt and divided into two equal 1-teaspoon portions
  • 1 large white onion, finely grated
  • 1 large carrot, finely grated
  • 2 cloves garlic, finely minced or grated
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato purée use 1½ tablespoons if using tomato paste
  • 1 cup dry red wine Cabernet Sauvignon or Pinot Noir recommended
  • 2 sprigs fresh thyme, chopped
  • 1 sprig fresh rosemary, chopped
  • 1 cup chicken stock
  • 2 tablespoons unsalted butter
  • 2 large egg yolks
  • 1 cup grated Parmesan cheese reserve some for topping, if desired
  • 1/2 teaspoon smoked paprika optional, for a subtle smoky flavor
  • 1 tablespoon chopped parsley optional, for a fresh garnish

Method
 

Step 1: Prepare the Potatoes
  1. Start by putting the quartered russet potatoes into a large pot. Fill it with cold water and add a pinch of salt. Bring it to a boil and cook until potatoes are fork-tender, usually around 15-20 minutes. While those are cooking, let’s focus on the filling.
Step 2: Cook the Meat
  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the ground lamb and cook until browned. You want it to develop some flavor, so let it sit for a minute before stirring. Drain any excess fat if needed.
Step 3: Add Veggies and Spices
