For the Meat Filling:
  • 1 tbsp cornstarch mixed with 1 tbsp water for thickening
  • 1 medium onion, finely diced
  • 2 tbsp tamari or soy sauce
  • 1 tsp cracked black pepper, divided
  • 1/2 tsp fresh rosemary, finely chopped
  • 3 tbsp tomato paste
  • 1 leek, thinly sliced
  • 1/2 tsp fresh thyme leaves
  • 3 garlic cloves, minced
  • 1 3/4 cups beef broth
  • 2 lb lean ground beef
  • 2 tbsp all-purpose flour
  • 1 cup peas fresh or frozen
  • 1 tbsp fresh parsley, chopped
  • 2 medium carrots, peeled and diced
  • 1 tbsp red wine vinegar
  • 2 tsp kosher salt, divided
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp smoked paprika, optional
  • 1 stalk celery, finely chopped
  • 1 tbsp unsalted butter
  • 1/2 tsp baking soda
For the Baked Potatoes:
  • Olive oil, for drizzling
  • 2/3 cup sharp cheddar cheese
  • 1/4 tsp chili flakes
  • 8 medium Russet potatoes, scrubbed and patted dry
  • Kosher salt, for sprinkling
  • 1/2 tsp white pepper
  • Chopped chives or fresh parsley
  • 3-4 tbsp grated parmesan cheese
  • 6 tbsp unsalted butter
  • 3/4-1 tsp kosher salt
  • 1/3-1/2 cup milk
  • 1/4 tsp freshly grated nutmeg

Method
 

Step 1: Prepare the Potatoes
  1. Preheat your oven to 400°F (200°C). Grab those russet potatoes, scrub them well, and pat them dry. Prick each potato with a fork to allow steam to escape. 
    Drizzle a little olive oil on them, rubbing it into the skin, then sprinkle with kosher salt. Bake for about 45-60 minutes or until tender when pierced with a fork.
Step 2: Prepare the Meat Filling
  1. While the potatoes bake, let’s whip up the meat filling. In a large skillet over medium heat, add 1 tablespoon of olive oil. Toss in diced onions, leeks, carrots, and celery. Sauté until softened, about 5 minutes. 
    Add minced garlic, fresh herbs, and seasoning. Stir in the ground beef, breaking it apart with a spatula. Cook until browned.
Step 3: Create a Savory Sauce
  1. Once the meat is browned, sprinkle flour over it and mix well. Then add the beef broth, Worcestershire sauce, tomato paste, and cornstarch mixture. Bring everything to a simmer. Let it bubble away for about 8-10 minutes, allowing the sauce to thicken and the flavors to blend.
Step 4: Prepare the Mashed Potato Mixture
  1. While the meat filling simmers, prepare the mashed potato layer. When the potatoes are done baking, cut them in half lengthwise. 
    Scoop out the insides into a bowl, leaving a bit of potato around the skin for support. Add butter, milk, cheddar cheese, white pepper, salt, and nutmeg to the bowl. Mash until creamy.
Step 5: Assemble the Dish
  1. Now for the fun part—assembly! 
    Make sure to mix the frozen peas into the meat filling after you take it off the heat. Fill each potato skin with the flavorful meat mixture, heaping it generously. Top off with a thick layer of your creamy mashed potatoes.
Step 6: Bake Again
  1. Sprinkle some grated Parmesan cheese and chili flakes atop the assembled stuffed potatoes. Return them to the oven for 15-20 minutes, or until golden and bubbling.
