Ingredients

  • 1 packet beef gravy mix 0.87 ounces
  • 1 bag frozen mixed vegetables, including small carrots 12-ounce
  • 1 pound cooked ground beef use more if desired
  • 1 tablespoon dried Italian seasoning
  • 2-3 cups leftover mashed potatoes
  • 1 1/2 cups shredded mild cheddar cheese
  • 1/2 cup sour cream
  • 1 can French onion soup 10-ounce
  • 1/4 cup diced onions for added depth of flavor

Method

Step 1: Prepare the Filling
  1. In a large skillet over medium heat, combine the cooked ground beef and onions. Cook until the onions are translucent, about five minutes. You’ll know it’s ready when you can smell that savory mixture, drawing you closer to the kitchen.
Step 2: Mix In the Vegetables and Flavorings
  1. Once the onions are soft, stir in the frozen mixed veggies, gravy mix, and French onion soup. Toss in that Italian seasoning. Allow the mixture to simmer for about 10 minutes. You want the veggies to soften but retain some of that delightful crunch.
Step 3: Assemble the Layers
  1. Spread the filling mixture evenly in a 9x13 inch baking dish. If you have leftovers in the fridge, this is where it seamlessly integrates into your dinner repertoire.
Step 4: Top It Off
  1. Take those creamy mashed potatoes and spread them over the filling. This is where things get fun! You can create swirls or peaks in the mashed potatoes for a rustic look.
Step 5: Add the Cheese and Bake
  1. Now, sprinkle the shredded cheddar over your layers. Because cheese is life, right? Preheat your oven to 375°F (190°C), and bake for about 25-30 minutes, until the top turns golden and the cheese is bubbly.
Step 6: Let It Rest Before Serving
  1. Remove it from the oven and let it sit for about 10 minutes. This resting time helps everything meld together while preventing the filling from escaping when you cut into it.

Notes

  • Use Leftover Mash: If you have leftover mashed potatoes, this is their time to shine. It saves time and adds a homemade touch.
  • Season to Taste: Feel free to adjust the seasoning. Adding a pinch of cayenne can give your dish a nice kick.
  • Brown Your Meat: Make sure the beef has a good sear before adding other ingredients. That caramelization brings flavor.
  • Try Different Proteins: If you prefer ground turkey or chicken, go right ahead! The flavor profile might change, but it will be delicious.
  • Make It Ahead: This dish is freezer-friendly. Assemble it and freeze before baking for a quick weeknight meal. Just remember to add extra baking time when cooking from frozen.
