Ingredients

Cake Ingredients:
  • 3 large eggs, room temperature
  • 2 cups white granulated sugar
  • 1/2 cup plain Greek-style yogurt
  • 1 cup neutral canola oil
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon pure almond extract optional
  • 1/2 teaspoon finely grated lemon zest
  • 1 1/2 cups cultured buttermilk
  • 3 3/4 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 3/4 cup premium strawberry jam or preserves
  • 2 cups ripe strawberries, thinly sliced
Chamomile Cream Ingredients:
  • 2 cups cold heavy whipping cream
  • 6 chamomile tea bags or 2 tablespoons loose chamomile flowers
  • 8 ounces block-style cream cheese, softened
  • 1/4 cup sifted powdered sugar

Method

Step 1: Prepare Your Ingredients
  1. Start by preheating your oven to 350°F (175°C). Grease three 8-inch round cake pans with butter or cooking spray.
Step 2: Mix Dry Ingredients
  1. In a large mixing bowl, combine the flour, baking soda, baking powder, and salt. Set this mixture aside for later.
Step 3: Combine Wet Ingredients
  1. In another bowl, beat the eggs and sugar until light and fluffy. Add the yogurt, canola oil, vanilla extract, almond extract (if using), and lemon zest to this mixture. Mix until well combined.
  2. Step 4: Combine Wet and Dry
  3. Now, alternate adding the dry ingredients and the buttermilk to the wet mixture. Start with the dry mix, then add buttermilk, mixing gently. Repeat until everything is just combined.
Step 5: Bake the Cake
  1. Pour one-third of the batter into each prepared pan. Level the batter by smoothing the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
Step 6: Prepare Chamomile Cream
  1. While the cakes cool, brew the chamomile. In a saucepan, heat 1/2 cup of water and steep the chamomile tea bags for about 10 minutes. Allow it to cool.
In a separate bowl, beat the cream cheese until smooth. Gradually add in the cooled chamomile tea and powdered sugar. Then, in another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Step 7: Assemble the Cake
  1. Once the cakes are completely cool, you can start assembling. Place one layer on a serving plate and spread a layer of strawberry jam, followed by a layer of chamomile cream and sliced strawberries. Repeat with the next layer. For the top, leave it unfrosted, showing off the delicious layers. You can sprinkle more strawberries and chamomile cream on top for decoration.

Notes

  • Use Room Temperature Ingredients: It makes for a smoother batter and better rise in your cake.
  • Don’t Overmix: Gently fold in your dry ingredients to maintain the cake's fluffy texture.
  • Cool Completely: Make sure your cake layers are completely cool before frosting; otherwise, the cream can melt.
  • Freshness is Key: Use fresh strawberries for the best flavor. They really elevate the dish.
  • Taste Along the Way: Don’t hesitate to taste your frosting and adjust sweetness or chamomile flavor as per your preference.
