Potatoes & Bacon

  • 8 slices thick-cut applewood smoked bacon
  • 2 pounds baby Yukon potatoes, halved if large

For the Board
  • 8 ounces creamy burrata cheese
  • 1 cup fresh basil pesto, homemade or store-bought
  • pitted green olives
  • fresh seasonal fruit, lemon wedges, and sliced ripe avocados
  • 6-12 eggs, cooked as desired
  • variety of cream cheese spreads
  • 1 pound cold-smoked salmon
  • assorted toasted bagels, naan, or artisan bread
  • marinated hot chili peppers
  • thinly sliced red onion and crisp cucumbers
  • fresh herbs: basil, dill, mint, and chopped chives
  • 2 cups halved cherry grape tomatoes
  • wildflower honey and assorted fruit preserves
  • 1/4 cup toasted pine nuts
  • 1 teaspoon lemon zest

Method
 

Step 1: Prepare the Potatoes and Bacon

    1. Prep the Potatoes: Place the halved baby Yukon potatoes in a bowl. Drizzle them with extra virgin olive oil and season with smoked paprika, kosher salt, and black pepper. Toss to coat evenly.

    2. Bake: Spread the seasoned potatoes on a baking sheet in a single layer. Bake for about 20-25 minutes or until golden and crispy.

    3. Cook Bacon: On another baking sheet, lay out the slices of bacon. Cook alongside the potatoes for 15-20 minutes, or until crispy. Drain on paper towels.
Step 2: Prepare the Eggs
  1. While your potatoes and bacon are cooking, prepare the eggs:
